お正月の栗きんとんや秋のモンブランなど、きめ細かくなめらかなペーストを作るのにに欠かせないのが裏ごし器。馬毛網は木べらで裏ごしをするとほどよくしなるので、素材の柔らかい部分だけが裏ごしされ、皮や太い繊維、固い部分は除かれます。 裏ごし器を使う時はまず、濡れ布巾でていねいに拭いてから作業を始めます。使い終わったら水で洗い、風通しのいい場所に陰干します。
