Brik (Tunisia). 'The brik is a deep-fried, triangular ‘turnover’ generally filled with a whole egg, tuna, onion, harissa and parsley. Other stuffi ngs include minced (ground) meat, potato, anchovies and capers. The casing is a thin semolina-based pastry sheet called malsouka, often described as a cross between fi lo pastry and egg/spring roll wrapping.
