P.F. Chang's Stir-Fried Spicy Eggplant. One of my favorites. (Barkingkitty!) I recommend roasting the eggplant chunks in 2 Tbsp oil rather than deep frying. Tastes seriously as good, and saves a TON of calories. Yay!
