These carrots are amazing! Roast in the oven at 400 degrees for about 20 minutes with some seasoning and a little olive oil. Then drizzle with about 2 tablespoons of olive oil, 3 tablespoons of honey, and about 1 teaspoon of balsamic vinegar. Pop them back into the oven for about 5 more minutes.
8 C tomatoes, peeled, chopped & drained 2 1/2 C onion, chopped 1 1/2 C green pepper 1 C jalapeno pepper, chopped 6 cloves minced garlic 2 tsp cumin 2 tsp pepper 1/8 C canning salt 1/3 C sugar 1/3 C vinegar 1/3 C Italian parsley or Cilantro 1 15 oz can tomato sauce 1 12 oz can tomato paste Mix and bring to a slow boil for 10 minute. Seal in jars and cook in hot water bath for 10 minute.Yields 3-6 quarts. Add 2 tbsp. freshly squeezed lime juice and salt and pepper upon serving
