To do the earflaps, once you get the toque to ear-level, do several stitches that aren't anchored to the previous round, then double back and attach the same number of stitches to the freehanging ones and proceed round the hat. Do likewise on the other side of the head. Then it's round and round again. Throw some decreases into the back so that it cups the skull nicely, and there you go."
