Chicken, Pesto and Spinach Puff Pastry Open Tart - I love doing this type of open tart. It is creative as well as quick, and is easy to make and portion for visitors. You can toss many different things on top, sweet and savoury, simple or complex. Tomato, peppers and pesto with fresh basil leaves, or cooked apples or pears with cinnamon and sugar. For a snack I top the pastry with canned tuna, garlic and herb salt, and dollops of my wife's red pepper relish.
