Choose either pork or chicken, with squash, mushrooms and onions. Fry 1 red onion with 4oz of pork or 4oz of chicken per person and ½ pkg of mushrooms in coconut oil, and then add to that 3 or 4 sliced squash. Serves 2.
Chicken Tortillas: 12oz of ground chicken breast (or 4oz per person) finely chop ½ red pepper, ½ jalapeno pepper, ½ red onion. Season with onion and garlic powder, salt and pepper, and Tajin classic. Cook in coconut oil, when near done add 1 can of organic pinto beans (or ½ cup per person). Serve with corn 3 or 4 small tortilla shells per person with salsa.
Chicken and cheese: Bake 4oz of chicken per person, season with onion and garlic powder and salt and pepper. When it is near done add 1 yellow squash sliced and 2 small zucchini sliced after that is done melt ½ cup of skim mozzarella cheese over the top per person. Use prego pizza sauce for dipping.
