Potato-free Breakfast Potatoes
White Sweet Potatoes - 1 white sweet potatoes 1/2 T coconut oil, liquid 1/2 t garlic powder 1/4 t oregano flakes 1/2 t dried rosemary 1 T bacon fat 400F. Toss the sweet potato cubes w oil and seasonings. Spread cubes in a single layer: bake 20 - 25 min, or until a fork can pierce a cube easily but firmly. Remove. In a large skillet, heat your bacon fat (or additional coconut oil) over M-L heat. Add potatoes in single layer & fry for 5 - 8 min, tossing every minute.
