Julia's Best Banana Bread. 1 3/4 cup all-purpose flour, 1 1/2 teaspoons baking soda, 3/4 teaspoon kosher salt, 3 large eggs (I use 1 egg, 2 Tbsp ground flax seeds, 6 Tbsp water), 1 1/2 cups sugar (I use 1/2 c sugar, 1 c unsweetened applesauce), 1 cup mashed ripe bananas (about 2 large), 3/4 cup vegetable oil (I use 1/2 c unsweetened applesauce and 1/4 c oil).

Multi-grain quick bread 2 c. 10-grain cereal, 2 c. whole wheat flour, 1 c. white flour, 1/2 c. old-fashioned oats, 1/4 c. sugar or honey, 1 1/2 heaping T. instant yeast, 1/2 T. kosher salt, 2 T. dough enhancer, 2 T. vital wheat gluten, 1/4 c. vegetable oil, 1/2 c. applesauce, 1 1/2-2 c. hot water. Mix dry, add wet ingredients. Divide in half, shape, place in greased loaf pans, cover, and rise 25 min. Bake 350 degrees for 25 minutes.

Skinny Roasted Strawberry Banana Bread. 1-1/4 cups strawberries, diced, 3 ripe medium bananas, mashed, 2 tbsp unsweetened apple sauce, 1 1/4 cups white whole wheat flour, 3/4 tsp baking soda, 1/4 tsp salt, 2 tbsp butter, softened, 1/2 cup light brown sugar (not packed), 2 large egg whites, 1 tsp vanilla extract, baking spray. Roast strawberries 25 min @ 350*F. Bake in loaf pan 50 min @ 350*F.

Mrs. Bradley's 1918 Rye Bread. Make a sponge of 1/2 cup lukewarm water, 1/2 yeast cake dissolved in 1/4 cup lukewarm water, 1 c rye flour. When light, stir in 1/2 cup scalded & cooled milk, 1 tablespoon sugar or molasses, 1/2 Tbsp salt 3 Tbsp cornstarch plus rye flour to fill the cup, 1 cup more rye flour. Let rise until light -- Again stir & put into greased loaf pan to rise -- Bake in slower oven and longer than white bread

Avocado Pound Cake Ingredients (2 loaves): 3 cups all-purpose flour, 1/2 cup yellow cornmeal, 1/2 teaspoon salt, 1 1/2 teaspoons baking powder, 1 1/2 teaspoons baking soda, 3/4 cup (1 1/2 sticks) unsalted butter, softened, 3 cups granulated sugar, 1 cup plus 2 tablespoons ripe mashed avocados, 4 large eggs, 2 teaspoons pure vanilla extract, 3/4 cup buttermilk. Two loaf pans. Bake 45-55 min @ 350*F.
