Cheddar Cheese Risotto: This was EXCELLENT. I added 1/2 cup smoked gouda cheese and more scallions/green onions (to individual taste). Also it may need extra vege broth then the tecipe calls for, start with 1/2 cup at a time. This is a must do again recipe! :)
Orzo Pasta with Spinach and Parmesan..... I LOVE orzo pasta! It is such a nice change of pace from rice dishes. This is super easy super delicious and super impressive! This recipe is also very versatile
Roasted Red Potatoes. Quarter the potatoes long-wise. Toss in olive oil, salt, pepper, and rosemary. Arrange potatoes in muffin tin as shown. Add garlic clove in the middle of the potato quarters. Add half a teaspoon of olive oil on top of each garlic clove. Bake 375 for 25 minutes! Enjoy. I know what I am going to be having tonight for dinner!!!
