Matzo Mousse Cake. Think Tiramisu but with more layers and chocolate! As a kid I wondered, why isn’t there a really delicious chocolate cake for Passover? My mom came up with this recipe for Kosher Passover (Pesadicka). It was a winner, and is the star dessert of our Passover meal. Soaking the matzo in Manischewitz wine gives it a texture like tiramisu. My mom has made this recipe with my kids for years. We all fight over the privilege of licking the spatula for the final bits.
Roasted Red Potatoes. Quarter the potatoes long-wise. Toss in olive oil, salt, pepper, and rosemary. Arrange potatoes in muffin tin as shown. Add garlic clove in the middle of the potato quarters. Add half a teaspoon of olive oil on top of each garlic clove. Bake 375 for 25 minutes! Enjoy.
