Zaatar is one of my favourite herbal mixes. We are lucky to have a woman who grew up eating it and creates it for us to buy at the local farmers market. I've tried making it, but her mixture is much tastier than mine.
Khobz al tawa is a delicious kind of bread found in Yemen, it is especially popular in Aden and the southern areas. It gets its name, tawa, from the surface that it is grlled on. You can also find this bread at many restaurants throughout the country. When it is filled with eggs and cheese, then its called mutabak. It has pretty simple ingredients but makes for a tasty bread to eat with shai, eggs, beans, or whatever you like.
