Caramel Stuffed Apple Cider Cookies, via Scrambled Henfruit. Pinterest has a lot of "stuffed" cookie recipes floating about, and this one convinced me that they're mostly overrated. I liked plain 'ol cookies I made without any caramels from the leftover apple cider dough much better than the ones with! Possibly it was just the use of Kraft Caramels in the center -- they were too hard and sticky when the cookies cooled, and things might have been better with homemade caramel sauce.

Ingredients: Yellow Cake Mix 2 Eggs 3-4 Overripe Bananas 1/2-1 cup chocolate chips, nuts, etc. (optional) Smash bananas in a large bowl Add remaining ingredients and mix well. Batter will fill 2 small loaf pans, or one large loaf pan. Make sure to spray pans well with nonstick cooking spray and a little bit of flour. Bake at 350° for 35-40 minutes (bake longer if using larger loaf pan)
