Cauliflower "Mac and Cheese." Great way to hide vegetables from kids and if you substitute a GF all-purpose flour for the flour in the sauce, it's gluten free! I thought this was delicious. Roasting the cauliflower gives it a deeper, slightly sweeter flavor. It did not pass the toddler test, but I enjoyed it enough that it will be a special mom dinner in the future.
Seven layer dip shots -- great for a party so people don't have to be crowded around a big bowl of dip. Layers: 1. Refried Beans 2. Sour Cream 3. Guacamole 4. Pico De Gallo 5. Queso Dip 6. Cheese 7. Green Onion (luckily I am not normal)
Roasted Red Potatoes. Quarter the potatoes long-wise. Toss in olive oil, salt, pepper, and rosemary. Arrange potatoes in muffin tin as shown. Add garlic clove in the middle of the potato quarters. Add half a teaspoon of olive oil on top of each garlic clove. Bake 375 for 25 minutes! Enjoy.
Zero points: Cauliflower popcorn (Break a head of cauliflower into popcornlike, bite-size florets, then spread them on a baking sheet lined with parchment paper. Spray the cauliflower lightly with butter-flavor cooking spray, then sprinkle lightly with turmeric, freshly ground pepper, and sea salt. Bake 20 to 30 minutes at 425 degrees F or until the cauliflower is slightly browned.) (1 cup = 29 cal., 5 g carb., 0 g fat, 2 g pro.)
