人参としめじのオープン稲荷と黒米海苔巻き」。油揚げは出し汁に醤油､甜菜糖少量でしっかり煮ておきます。前の晩に煮ておくのがポイント。冷めて味が染み込んだら味見をしてさらにりんごジュースと醤油を調整して加え煮ます。味が染み込んだ油揚げに酢飯にした玄米ご飯を詰めてオレンジと黄色の人参の梅酢きんぴら､しめじを盛りつけて出来上がり。海苔巻きは黒米を使いました。ほのかに酸味のあるパプリカとかぼちゃの甘み､インゲンがほどよく合わさって彩りも秋らしい趣き。
