Thai Coconut Shrimp Soup
Method: Heat olive oil in a pot over medium heat. Add onion, garlic, ginger, and bell pepper. Sauté until soft. Stir in coconut milk, broth, and fish sauce. Bring to a simmer. Add shrimp and fresh chilies, cooking for 3-4 minutes until shrimp turns pink. Stir in lime juice, and season with salt and pepper. Serve hot, garnished with cilantro.
Coconut Curry Shrimp Soup
In a large pot, sauté garlic and ginger until fragrant. Stir in curry paste, then add broth and coconut milk. Bring to a simmer. Add shrimp and cook until pink, about 3-4 minutes. Stir in soy sauce, lime juice, and cilantro. Season with salt and pepper. Serve hot with extra cilantro for garnish!
