The candies have a coating made out of food coloring and sugar. When it touches the hot water, the coating starts to dissolve causing the food coloring to come off. The science of why the colors bleed to the center of the plate is called concentration gradient. The concentration of sugar is higher near the candies than the middle of the plate, where there is only water. Therefore, the food coloring diffuses down a concentration gradient, from areas of higher concentration of sugar to areas of lower concentration. Did you notice that the colors don’t mix as they go toward the center of the plate?
