Here's a fun variation on our recently posted Beetroot Sourdough Bread recipe. To maximize color, I used only organic bread flour (400g), 150g beetroot, and 750mg vitamin C. I dropped the water to 230g to compensate for the less thirsty flour and the increased beets, but it was still a challenging-fun high hydration dough.
