Japanese fruit cake

This is my mom’s recipe for Japanese fruitcake, a showstopper of a cake with two light (plain) layers and two dark layers (with nuts and raisins). Between each layer is a deliciously fruity lemon coconut filling.

Japanese fruit cake - Hyde County Cookbook

It's been about 10 years since I've had Grandma's cooking. One of my favorite things that she made was Japanese Fruitcake. She didn't really have a recipe in the strictest sense of the word, just some notes scrawled on an old piece of paper. I had never made a cake from scratch before, but it turned out pretty good.
