Chilli Jam: Although I call this chilli jam, I don't mean by this that it's the sort of thing you'd spread on your toast at breakfast (though smeared inside a bacon sandwich, it could be a real help one hungover morning) but rather a chilli jelly - chelly? - that glows a fiery, flecked red and is fabulous with cold meats or a cheese plate. And just a small pot of it makes a gorgeous present.
Nothing will ever take the place of my Ham in Coca-Cola from Bites – in my heart or on my table – but this slow-baked ham is a revelation of a different sort. The meat is astonishingly tender and carves into thin slices with ease; there is also very little shrinkage, and no wrangling with large joints of meat in boiling liquid.
Subway Classic Tuna (Copycat Recipe) You will need: 24 ounces chunk light tuna in water, drained 1/3 cup mayonnaise 2 teaspoons lemon juice 1/4 teaspoon salt 1. Combine all ingredients in a small bowl. Stir vigorously to break chunks of tuna. Chill until cold. 2. Use an ice cream scoop to serve two scoops of tuna on each 6-inch sub roll. Makes enough tuna for three 6-inch sandwiches.
