Lentil Stew Over Mashed Potatoes Ingredients 1 cup dry lentils (green or brown) 1 tbsp olive oil 1 onion (diced) 2 carrots (sliced) 2 celery stalks (sliced) 3 garlic cloves (minced) 1 can (14.5 oz) diced tomatoes 4 cups vegetable broth 1 tsp thyme 1 bay leaf Salt and pepper to taste For the Mashed Potatoes: 4 large potatoes (peeled and chopped) ½ cup milk 4 tbsp butter Salt and pepper to taste Instructions: In a large pot, sauté onion, carrots, and celery in olive oil until soft. Add garlic and cook for 1 minute. Stir in lentils, tomatoes, vegetable broth, thyme, and bay leaf. Bring to a boil, then simmer for 25-30 minutes until lentils are tender.
