Roasted Strawberry Whipped Ricotta Toast
Ingredients: Roasted Strawberries: 1 pint strawberries, sliced, 1 tbs honey, 1 tsp balsamic vinegar, Pinch of salt Whipped Ricotta: 1 c ricotta cheese, 1 tbs honey, 1/2 tsp vanilla extract For Assembly: 4 slices of crusty bread, toasted, thyme or basil leaves, honey Instructions: 1. Strawberries: Preheat the oven to 375°F. Line a baking sheet with parchment paper. In a bowl, toss the sliced strawberries with honey, balsamic vinegar & salt. Spread the strawberries in a single layer. Roast for 20-25 minutes until soft & slightly caramelized. Cool. 2. Whipped Ricotta: In a medium bowl, combine the ricotta cheese, honey, & vanilla extract. Whip ricotta until smooth & creamy. 3. Toast: Spread a generous layer of ricotta on each slice. Top with strawberries, thyme/basil & drizzle honey.
